Strawberry Pie

This lovely recipe comes from my husband’s Grandma. We were at her house one night for dinner, years ago, and this is what she made for dessert. It was the first time I had ever had strawberry pie and it was delicious. It is a wonderful, cold, summery dessert with amazing strawberry flavor coming not only from the strawberries, but the gelled filling too! Make sure to pour the filling over all the strawberries so they have that pretty glazed look to them.

Strawberry Pie Recipe

1-9″ Pie Crust, Baked

Combine the following in  a saucepan. Bring to a boil over medium heat (stirring often) and boil 1 minute or until thick.

1 C. Sugar

2 Tb. Cornstarch

2Tb. White Syrup*

1 C. Water

Then add:

3 Tb. Strawberry Jello (the powdery stuff that comes in the Jello box)

In the bottom of the baked pie shell, pile washed and drained strawberries until level with pie shell.

Pour the liquid mixture over all the strawberries. Cool in refrigerator.

Serve with whipped cream or ice cream.

*Grandma says the white syrup can be left out and it works fine.
