Sweet Sourdough Bread Recipe

Sweet Sourdough Bread is in one word, Delightful. It is a sweet (but not too sweet), moist, buttery tasting bread. I love it toasted with butter. But, it’s wonderful eaten plain, too with a cold glass of milk. We use it mostly for eating with breakfast and for snacking. Interested in making it? Here’s how.

First you have to start with a starter. To make that do the following.

1 Pkg. Yeast

1 C. Warm Water

3/4 C. Sugar

4 T. Potato Flakes

Mix ingredients in a glass jar or container. Cover loosely and let stand at room temperature for 24 hours. Put in the refrigerator (or leave on counter) for 3-5 days.

After the 3-5 days take starter, early in the morning, and feed with the following that you’ve first combined:

1 C. Warm Water

3/4 C. Sugar

3 T. Instant Potato Flakes

Let that sit on your counter at least 8-10 hours, stir occasionally. It will look something like this.

In the evening, or close to bedtime, it’s time to make your bread dough. In a large bowl combine:

6 C. Bread Flour (or up to 1/2 regular flour)

1/2 C. Sugar

1 Tsp. Salt

Add the following to the flour mixture:

1 1/2 C. Warm Water

1/2 C. Oil

1 C. Starter

Don’t forget to clean as you go. Stir everything to combine into a soft dough. I’m using a danish dough whisk to do my stirring. Before I used a large wooden spoon. I think the dough whisk mixes better with less effort. Although there’s still effort involved. It doesn’t do it for you, after all.

Put oil in the bottom of the bowl and turn dough to coat. Cover bowl with a kitchen towel and let rise in an oven with the light on overnight. I’ve let my dough rise for as long as 18 hours. The colder your kitchen the longer you will have to let it rise.

I keep my starter on my counter between uses. After the dough has risen, punch it down. Fold it over about 8 times to remove the air bubbles. Divide into two greased loaf pans and cover with a kitchen towel. Place back in the oven to rise until dough is near the top of the pans (2-3 hours/ In my cold kitchen this last time it was closer to 5 hours).

Remove pans to preheat oven to 325°F. Once oven is preheated bake for 45 minutes or more (Until browned and firm, try tapping it too. It should sound hollow.) Let cool on a wire rack. Slice and Enjoy.
